This will let you toggle the HUD on/off ingame, and removes the last known position silhouette.

Splinter Cell Conviction\src\system
This also hides menus so you need to press TAB after starting the game to see the menu again. You should also rebind the TAB key because it's already set to "show objective"

This wont disable the detection rings however, to do that open Conviction.ini (in the same system folder) and look for these lines:
DetectionHudScaleX=70
DetectionHudScaleY=70
And then simply change both values to 0
