Document is in lower floor, in small room.
Letter lays on the bed on the top floor of that house.
In the chest in partisans HQ (the constant element of the plot).
On the second floor of this building.
On the bags, next to fountain.
On the IInd floor of the restaurant.
It's hard to be seen - it's laying on the floor, on small balcony.
You can collect it after getting through the gate (advance in main quests).
Code to the safe has an officer walking of west nearby.
In the broken wall - under the picnic basket.
Next to the entrance - in the book in bookcase.
Document in the crypt (optional task) - you can blow the wall on the back or open it using key (in the church, next to the entrance, on the table).
On the balcony - can be reached using ladder from the roof.

On this page of world atlas to Sniper Elite 4 there is a high quality map of secrets for the second mission of the game - Bitanti Village. This is probably the most difficult map to search for secrets. Most of them are hidden in buildings where they are difficult to see and there are many houses that should be investigated.

Bitani Village is arguably the most difficult map, when it comes to collectibles. The majority of them have been hidden in buildings, where they are hard to discern, and there are many buildings that you can actually enter. Some of them are located in difficult spots, some of them are hidden, e.g. under objects and there is only a fragment of the document sticking out. Secrets that can be found in the possession of soldiers have been marked with red dots.
