How to unlock the main quest?
A Mystery in the Depths main quest will be available after completing Camera Work in the Depths.

After finding the mysterious statue in Depths and unlocking the camera, return to Josha in Lookout Landing. Talk to Tauro and Josha to unlock the next task in the undergrounds.
Talk to Josha again by the map and ask about the quest's details.
How to find statues in the Depths?
Teleport to Iayusus Lightroot, where you found Robbie and the first statue.

The face and left hand of the statue point the way in which you must go to find the next statue.

The statues will lead you to the temple in the southern part of the Depths. On the way, unlock Nihcayam Lightroot, Nogoukoyk Lighrtoot, and Koradat Lightroot. The place you are looking for is located in the Great Abandoned Central Mine.
Great Abandoned Central Mine

Upon arriving at the Great Abandoned Central Mine, you will meet two people. Examine the altar and unlock a new ability for Link - Autobuild.

Approach the round platform and attach the missing wheel to the vehicle using the Ultrahand skill. Activate the Autobuild ability and approach the square platform. Choose a vehicle from the list and wait for all the elements to connect with each other.
Fight with Master Kohga
After rebuilding 2 vehicles, the battle with Master Kohga will begin. You may remember this character from the previous installment, The Legend of Zelda: Breath of the Wild.

Master Kohga uses various vehicles made by Zonai devices. Shoot an arrow with a bomb or a Keese Eyeball in his direction. When the opponent falls off the vehicle, quickly run up to him and attack a few times. You can also steal his machine and try to run him over.
After winning the battle, you unlock Side Adventure Master Kohga of the Yiga Clan.

Approach the robot and collect the Schema Stone from it, an object that stores machine schematics for Zonai devices.
Lastly, return to Josha at Lookout Landing and tell her about your discovery.

After the conversation with Josha, go to the balloon near the stairs and rebuild it using the Autobuild ability.
