If that Buzzword hint in Cookie Jam didn’t tell you much, I don’t blame you. It could’ve pointed to so many things, but the answer you were looking for is:
Lard is a type of fat that comes from pigs, specifically rendered (which means it’s been melted down and purified), and it’s been a staple in kitchens for centuries. People love it for the rich flavor it brings and, more importantly, how amazingly flaky it makes pastries.
Believe it or not, a ton of your favorite baked goods probably use lard. It’s perfect for pie crusts, biscuits, tamales – you name it. It also holds up well at high heat, so it’s great for deep frying. Yes, even some desserts need a hot oil bath, like donuts, for example.
And if you’re wondering if lard is healthy, well, that’s a bit complicated. It’s high in saturated fat, but also contains monounsaturated fats like oleic acid (the same kind found in olive oil). Plus, it’s less processed than a lot of store-bought shortenings. Like most things, it’s all about moderation.
